Wood siding should end 6-8" above soil. What is the distance, if any, that apply to other types of siding? And what would be applied to the surface below the siding to prevent water/moisture?

That applies to any siding with wood framing behind for obvious reasons. If solid concrete or block or stone no problem.

Don't think about the siding itself. Think about whats behind it, thats good to eat if you are a bug.

If you're using the IRC, wood siding needs to be 6" above soil.

Untreated wood framing, if it's resting on a concrete or masony foundation wall, should be 8" above the exposed ground.

Brick veneer can be placed below grade, but it's supposed to be solidly grouted and, of course have weeps & flashing above grade.

The IRC doesn't specifiy clearances for other types of siding, but the manufacturer's generally do.
